Chef Paul Toussaint has opened his new restaurant in the heart of the Jean-Talon Market in Little Italy. The brand-new 3 Pierres 1 Feu is a tribute to the wisdom transmitted through cuisine, from Afro-Caribbean culture to Quebec terroir.
“Our name honors the ancestral method of Haitians and other cultures. With three stones to support a fire, our ancestors created fireplaces that brought families and villages together. At 3 Pierres 1 Feu, we modernize this spirit. Our kitchen is an altar, the fire our heart, and every dish is prepared with passion. We celebrate the ingenuity and culinary art of our ancestors. Bien que les appellations fassent voyager – poulet jerk, boudin créole, griot, picahna (découpe de bœuf populaire au Brésil) – les produits sont majoritairement locaux.
